Ingredients of Mini Meatloaves
- It's 1/2 lb of lean ground pork.
- It's 1/2 lb of lean ground beef.
- You need 1 of wholewheat pitta bread, shredded.
- You need 1 small of onion, shredded.
- You need 2 medium of carrots, shredded.
- It's 1/4 cup of unsweetened almond milk.
- You need 1 tbsp of tomato paste.
- It's 1 tsp of Worcestershire sauce.
- You need 1/2 tsp of mixed herbs/ Italian herbs.
- It's 1 pinch of salt and black pepper.
- It's 6 of sprays cooking spray.
- You need 1/2 cup of tomato ketchup.
Mini Meatloaves instructions
- Heat oven to 200C.
- Combine all meatloaf ingredients (except ketchup and cooking spray) in a large bowl.
- Mix really well.
- Spray cooking spray onto a 12 hole muffin tray.
- Take balls of the mixture and sort of throw them into muffin tray.
- Cook for 20 minutes.
- Spoon equal amounts of the ketchup onto each meat loaf.
- Cook for 5 minutes more.
- Serve with veg and rice or mashed potatoes.
