- You need 1 of onion.
- You need 1 of carrot.
- Prepare 1 of courgette.
- Prepare 1 of red bell pepper.
- It's 450 grams of cauliflower florets.
- It's 2 cloves of garlic.
- Prepare 1 cm of length of peeled ginger.
- You need 80 grams of sweetcorn.
- Prepare 1/2 tsp of ground cumin.
- Prepare 1/2 tsp of turmeric.
- You need 300 mls of strong vegetable stock.
- It's of salt and freshly ground black pepper.

- Roughly chop the onion, carrot, courgette and red pepper into chunks and put into a food processor with the cauliflower florets, garlic and ginger, pulsing until finely chopped (but not pureed).
- Put the mixture into a saucepan with the cumin and turmeric and stir to coat.
- Add the stock and sweetcorn and bring to a simmer. Let cook until the stock has all been sucked up by the cauliflower, around 15 minutes.
- Season well with pepper and some salt and serve immediately.
