- You need 2 of tomatoes- puréed.
- Prepare 1 of large onion (diced).
- It's 3 of garlic cloves (minced).
- You need 1 bunch of coriander chopped roughly.
- Prepare Half of tsp of cumin seeds, coriander & cumin powder & garam masala.
- Prepare 2 TBS of tomato paste.
- Prepare Half of a tsp mustard seeds & crushed black pepper.

- Heat oil in a large pan. Add cumin & mustard seeds and toast for afew secs..
- Add onions, garlic, and green chilli, fry lightly for 3 mins.
- Add all spices except garam masala and cook for 2 mins stirring.
- Add tomato and tomato paste and cook for 5mins adding a little water to prevent the sauce from sticking.
- Add chopped coriander, salt and garam masala and mix well.
- Add your fries mixing gently until all fries are coated with the masala..
