- Prepare 1 pack of chopped chorizo.
- Prepare 1 pack of chicken breast or thigh chopped into pieces.
- You need 2 tins of chopped tomatoes.
- It's 1 of courgette (chopped).
- Prepare 1/2 head of broccolli (chopped).
- It's 1 tbsp of mixed herbs.
- You need 1 of red or orange pepper (chopped).
- Prepare 1 of large red onion (chopped).
- You need 1 clove of garlic.
- You need of Small pack green beans.
- Prepare 1/4 pint of red wine (optional).
- Prepare 2 tbsp of chicken gravy granules.
- You need of (Please note: the green vegetables could be replaced with any other vegetables - cauliflower, peas, broad beans etc).
Spanish Chicken step by step
- Sweat the onions, garlic & pepper in a frying pan with a small amount of oil until softened..
- Add the chicken & fry until browned..
- Add the courgette to the frying pan & fry until slightly browned (this will prevent the courgette becoming sloppy during slow cook)..
- Put the gravy granules in a jug and add 1/4 pt boiling water..
- Transfer contents of frying pan to a casserole pot..
- Add all other ingredients (inc. stock) to the casserole pot & give a thorough stir to ensure everything is combined..
- Cook in the oven on Gas Mark 4/350F/177C for approximately 30 minutes (stirring half way through)..
- Taste a piece of the chicken to ensure it's cooked through. Serve with vegetable cous cous or rice..
