- Preheat oven to 180. Using a knife or mandolin, slice potato thinly. Dry to remove starch. Melt some butter in microwave, brush with a pastry brush.
- Roll out pastry into large aluminum tray. Brush with butter. Place potato slices all around the edges, the butter helps them to stick. Prick with a fork. Blind bake for 5-6 minutes. Remove from oven, add eggs. Slice up the ham and put on top.
- Add cheese, I used Pecorino. Put back in the oven for another 25-30 minutes. Rest on a wire rack before serving 😀.
