- Preheat the oven to 180 oC Unroll the pastry sheet onto a piece of parchment paper on a baking sheet Use a saucer to cut out four circles of pastry.
- Sprinkle half caster sugar over the pastry circles Pile the strawberries into the centre of each circle leaving a 1” border of pastry on the outside Brush the beaten egg around the border of the pastry circles.
- Fold in the edges of the pastry overlapping the folds as necessary Brush the border with the beaten egg and sprinkle with the remaining caster sugar Bake for 20 minutes.
