- Add finely chopped red onion, garlic and ground coriander with salt, pepper mix them well..
- Add corn, diced carrot and finely chopped spring onion in a bowl, pour the red onion mixture on no.1 in and add on plain flour and rice flour and water in mixed them well like a batter..
- Put vegetable oil in a pan with high heat, then deep fry until corn fritter cooked in golden brown.
- Put sugar, vinegar, chilli in the small saucepan on low heat. Stir until sauce thicken. A pinch of salt then taste. Should be sweet and sour and spicy.
- Tips : make sure the oil is hot before you deep fry the fritter,so it doesnt absorb alot of oil. final result fritter will be chruncy and not oily. serve with hot chilli. superb!!!.
