Start with a large sized sauce pan and add the buttermilk together with the cream cheese & sour cream until they are thoroughly mixed & melted over med/low heat. (Approx 10-20 mins).
After the mixture has thickened up a bit start to add the cheese slowly, leaving the 8oz of Colby Jack cheese for the topping..
Add the seasonings.
Sprinkle the leftover Colby Jack cheese on the macaroni and broil for 15 minutes or until the the cheese starts bubbling..
